Pan-Fried Fish with Veggies

Here's a little about little ol' me!
I love long walks on the beach, and I drink a lot of coffee! LOL 
Growing up, I was very blessed to have both parents and grandparents (on my mother's side) who cooked and farmed their own veggies. I have been blessed to know the difference between fresh veggies picked straight from the garden and purchased produce from a grocery store. I prefer fresh veggies, but life often calls for the convenience of bringing them home from the store.
Growing up, I was not into cooking at all. Why?! I had breakfast, lunch and dinner prepared for me FRESH everyday! My parents, yes mom and pop including grandparents (when they were alive) would always cook breakfast for my four siblings and me. We always had elaborate meals no matter what time of day. Cereal was strictly for dessert. It may sound weird, but I loved it! Fruity Pebbles and Fruit Loops were my favorites.
I have always been a very picky eater, which is how I got into cooking. I am the girl that orders a good burger with NO sauce, no salt on my fries and extra ice in my HI-C. While I do like sauce on my burger, I just like to put it on myself and I hate a messy runny burger; the bun should never be drenched, thank you very much!  
I wasn't taught to cook with tablespoons or measuring cups. My cooking is based on "eyeballing," and tasting my food. I believe that food is a beautiful form of art! I love to be creative and make my dishes that look like you've just ordered them from a five-star restaurant. Don't get me wrong, food that isn't the most aesthetically pleasing sometimes ends up being the BEST thing EVER! I like to create and spin-off dishes that my husband and son love! I'm all about re-creating.
Here's the kicker: I hardly ever eat my own dishes. I taste as I cook and I'm normally full by the time plating is complete. My family is my passion and food is theirs. That is why I do what I do!  
The meal that I have selected to share with you is a traditional meal in my Thai and Laotian culture. It is called "Pan-Fried Fish with Veggies," or "Taht Bah."

Pan-Fried Fish with Veggies
"Taht Bah"
Prep Time: 20 Minutes   |   Cook Time: 60 Minutes   |   Total Time: 80 Minutes
Serves 4

Ingredients:
  • Rice, prepared
  • 5 pieces Fresh or Frozen Tilapia*
  • 4 stems Green Onions
  • 1 carton Cherry Tomatoes
  • 1 Roma or House Tomato (sliced in long pieces)
  • 1/2 to 1 Bulb of Garlic (to your preference, I love me some garlic!)
  • 1/2 Red Onion
  • 2-3 tbsp Olive Oil
  • Seasonings (just a sprinkle of each and keep tasting and adding as you go): 
    • Garlic Salt
    • Fresh Coarse Black Pepper
    • Cayenne Pepper
    • Parsley
  • Optional: Oyster Sauce, Sriracha & Fish Sauce. 
      • I grew up eating this dish with all three sauces. If you decide to use Oyster Sauce and Fish Sauce, use about 1/2 tablespoon of Oyster Sauce and 1 tablespoon of Fish Sauce. I buy brands that are made in Thailand. If you do not like Oyster or Fish Sauce, you can use soy sauce, but NOT Kikoman)

*Tilapia can be substituted for any white fish that is firm, like Catfish. Fresh or frozen fish can be used; I prefer fresh.

Directions: 

1. Pat dry the fish, set aside. 
2. In a wok style pan or non-stick skillet, drizzle olive oil and heat on HIGH. 
3. When pan is hot, drop each filet of fish and let it sit on high for about 3 minutes. It's okay if the fish is overlapping. 
4. Season fish with the dry seasonings. I eyeball everything, so if I had to estimate, about 2 sprinkles of each. Be careful! Fish should never be over seasoned-especially over salted.

5. Now the fun begins! Let's building the pyramid. Start stacking the veggies you have chopped, sliced and diced. The order of the stacking is important in my opinion.
-Red onions
-Tomatoes
-Green onions
-Garlic

6. Cover and change the burner to low for  20 minutes. 

7. After 20 minutes, tear down that beautiful pyramid and move the veggies to the side of the pan with the fish peeking through in the middle. If you prefer that your veggies are soft, you can cook them a little longer. When they are soft, the whole dish almost turns into a thick sauce to pour over the rice. DO NOT MOVE THE FISH. Let it stay at the bottom while all of these wonderful flavors marry and become one! 
This is the perfect time to taste your dish. The flavor is becoming a combination of the seasonings and the natural sweating (ha-ok) from the veggies. 
8. Cover. Check occasionally to see how the veggies are cooking down.
9. After the 20 minutes, turn the burner to medium. Cook   covered for another 10 minutes.
10. After 10 minutes, turn off the burner-keep it covered. 
11. Let sit for 10 more minutes, then serve over your preferred rice.  

Fast Food Detox

Yesterday, poor time-management resulted in a huge mistake that cost me all of the wonderful, healthy vibes I've been feeling for weeks! 


I ate fast food. Eeek! 

Burger King to be exact. Don't worry, I didn't eat a Whopper or any other "meat," products. I did, however, scarf down a mayonnaise and iceberg lettuce covered Big Fish and salty, flavorless onion rings. 

After eliminating meat from my diet in June of 2016, I decided that I would still eat tuna, salmon, and catfish occasionally until the end of the year. However, fast food was not part of the equation until yesterday. I have managed to avoid all fast food since transitioning to a healthy lifestyle, primarily because fish sandwiches are only offered at most fast food restaurants during lent in my area. Yesterday, I had to choose between Burger King and Dairy Queen...it was a royal mess! 

Here's how it happened: 

I was running errands right around lunch time. For breakfast I ate a bowl of almond milk soaked granola with added protein. It held me over until I walked into the grocery store. Shopping when you are hungry is the worst thing you can do if you are on a budget, on a diet, or human. Just a hint of hunger will have you grabbing items that you don't need and throwing them into your cart without a second thought. That's what happened to me. 


I realized that I was hungry, and purchased a few things that I fully intended to eat for lunch. Then I purchased a few more things...and a few more things after that. Before I knew it, I'd spent almost an hour in the store and my stomach took control of my brain. 

I could have driven in the direction of home; but I didn't. Instead, I drove in the opposite direction and found myself in the drive-thru line of Burger King, staring at the window decor and wondering why I was about to ingest something resembling food from a place that was aggressively marketing Cheeto-dust covered chicken fries. 

I ordered my fish sandwich, which was labeled 100% Alaskan Pollock. The nerve. 

I knew I'd made a terrible mistake after the first bite. 
I regretted that mistake after the second bite. 
After the last bite, I wanted to turn back the hands of time and relive the last 20 minutes. 

The greasy, chemical-ridden sludge sunk down to my stomach and I instantly felt tired and heavy. My four-month old has had a cold for about a week, and I could feel my immune system weakening and my body succumbing to germy mucus. I also had a headache for absolutely no reason. 


I knew that I had to do something to detox my body! 

STEP 1 
Cucumber Water

To begin my detox, I drank 32oz of cucumber water. I simply added about 7 slices of cucumber to a large cup of spring water, covered the cup, and let it sit in the refrigerator for about an hour before drinking.
 
Cucumber water is one of my favorite things. Along with a refreshing taste, cucumber provides a number of health benefits. It flushes toxins and supplies Vitamin B1, Vitamin B5, Vitamin B7 (biotin), fiber,magnesium, potassium, manganese, Vitamin K, molybdenum, pantothenic acid, copper, phosphorus and silica. They also contain fisetin, an anti-inflammatory that supports brain health, and Lignans, polyphenols that lower the risk of brain, uterine, ovarian, and prostate cancer. Cucumbers also help to prevent cancer and aid in weight loss. 

Cucumber water is the perfect drink on a hot day!


STEP 2 
Turmeric Tea



I decided to try a turmeric tea concoction in an attempt to re-balance my body. Turmeric, the spice that makes delicious Indian food orange, contains curcumin, a powerful anti-inflammatory. All of it's health benefits makes turmeric the perfect cure-all.  It is an antioxidant, an anti-inflammatory, an anti-microbial, and a natural painkiller. It can help prevent cancer or boost the effectiveness of chemo drugs in cancer patients, and it protects the liver. Turmeric can be used topically to help wounds heal quickly, and to treat psoriasis and eczema. In addition to all of that, it even helps to reduce depression and promote weight loss, increasing digestive regularity. Turmeric can have diuretic effects, so if you plan to drink this tea, make sure there is a bathroom nearby just in case. 

Turmeric grows as a root, but can be purchased in capsule and powder form or as a prepared tea. I wanted to control the dosage of Turmeric and other spices, so I opted to make my own tea.  

The spices I used for this tea were CLOVE, an antioxidant that aids in digestion, boosts the immune system, and helps to control diabetes; CINNAMON, an antioxidant that lowers blood sugar and reduces the risk of health disease; NUTMEG, which detoxifies, soothes indigestion, and boosts the immune system; BLACK PEPPER, helps the absorption of curcumin and has antibacterial properties and contains manganese, iron, potassium, Vitamin C and Vitamin K; and ALLSPICE, prevents against digestive issues and stimulates digestive regularity. 

For this recipe, you should definitely have a cheesecloth on hand. I used pantyhose (a frugal bit of advice and something I use to make homemade loc twisting gel), but the pantyhose was thicker than most standard styles and as a result, the straining process was slow and frustrating. 






Turmeric Spice Tea
Prep Time: 5 Minutes   |   Cook Time 15 Minutes   |   Total Time: 20 Minutes
Serves 2

Ingredients: 

  • 3 cups Spring Water
  • 1/2 tsp Ground Clove (antioxidant, anti-seotic, and digestive aid
  • 1 tsp Cinnamon 
  • 1/2 tsp Allspice 
  • 1 tsp Nutmeg
  • Pinch of Cracked Black Peppercorn
  • 2 tsp Turmeric 
  • 2 tbsp Raw, Unfiltered Honey (or more, to taste)
  • 1/2 cup Almond Milk 
Directions: 

1. Combine spices and water in a medium saucepan, and bring to a boil. Reduce heat and let simmer for 10-15 minutes, stirring occasionally. 

2. Strain spices using a cheesecloth. 

3. Add honey to the tea, and stir to dissolve. Add almond milk and serve hot. 


STEP 3
Apple Cider Vinegar

The final detoxifying drink I ingested was far less pleasant than the Turmeric Spice Tea, but beneficial nonetheless.  


I mixed 1 tbsp of raw, organic apple cider vinegar to 6 ounces of spring water. Apple cider vinegar helps to relieve heartburn and acid reflux, promotes healthy cholesterol, aids in weight loss, promotes healthy blood sugar, contains many antioxidants, and helps nutrient absorption. The apple cider vinegar water was a great follow-up to the Turmeric Spice Tea because it helped my body to absorb the good, while helping the cucumbers flush out the bad.

By the end of the night, the fast food fiasco was a distant memory. I felt a million times better! 

When transitioning to a healthier lifestyle, reverting back to old habits is not without consequence. The body will reject the grease, fat, sodium, preservatives and chemicals, especially after getting used to a healthy, nutrient rich diet. I knew that to get back on track I would have to take action quickly, and I'm glad I did. 


If you know that you'll be out and about during meal times, bring small healthy snacks to keep hunger at bay. Nuts and seeds have enough protein to hold you over, and fruit is a satisfying snack that you can easily carry with you. 

I will be making every effort to avoid fast food. However, in the event that you're on a road trip or have no choice but to grab something on the go, I would suggest Taco Bell. Generally, Taco Bell isn't considered the most tummy-friendly food, but when you eliminate the meat from their selection, you'll find that some of the offerings are much more favorable than its competitors. Just ask about their vegetarian options; you won't walk away feeling incredibly regretful.

Mother's Milk: Pump or Dump?

When my two oldest children were babies, I breastfed exclusively. I didn't even consider the use of formula, and as a result I nursed both children until they reached 13 months of age. 

In the beginning, I failed to introduce them to a bottle. By the time they reached 3 months, they refused to drink my expressed milk from a bottle, and would scream bloody murder until they could snuggle up in my arms and drink from the breast. Luckily, I was able to stay home with them and didn't have to endure the trauma of transitioning to a daycare and having no choice other than being fed from a bottle. 

Both times, breastfeeding felt very restrictive; I couldn't go to the movies, the hair salon, or have me-time if it involved being gone for more than an hour. I did not trust the "pump n dump," method, so I abstained from all alcoholic beverages as well. 
Somewhere around the 9th month of nursing, I developed thrush on my nipples. To date, I can't recall a more painful experience. The searing pain was worse than labor! I now know that re-balancing the bacteria in my body by changing my diet and eliminating things like sugar, processed foods and bread would have been necessary for proper healing. Yet, at the time I was young and inexperienced, and did not consider natural remedies as a practical solution. I waited too long to go to the doctor's office, and when I did finally address the issue, my physician prescribed Nystatin, which did very little to heal my nipples. The thrush was recurring, and by month 13, I was desperate to stop nursing! 

By the time my third child was born, I had sworn off breastfeeding forever, still emotionally scarred and terrified of enduring the toe-curling pain again. I chose to feed my daughter with formula. She did not tolerate the regular dairy formula, so she drank a soy-based blend. I enjoyed having more freedom to run errands and spend time away from home. She attended daycare while I was at work, so I was confident that she was getting all of the nutrition her body needed to grow. 

When my youngest child was born, I decided to formula feed again. I wanted to breastfeed, but I was just too afraid of the pain. In the hospital when he was born, I assured the nurses that he would be bottle-fed, and began the routine of making little bottles and tracking how much he ate every hour. He was feeding just fine, and when I got home from the hospital I had a small supply of pre-made bottles that I planned to use before switching to the powdered form. 

On the second day that we were at home, I began to feel my breasts swell as my milk came in. Something in the back of my mind said, "Just try it." I shrugged it off, but the thought wouldn't go away. I decided to try to breastfeed him, just once. I was curious to know whether he would latch onto my breast, since there is exhaustive information about getting baby to latch at birth. I figured that we'd missed the window, which was fine by me, but I wanted to try anyhow. 
My Little Guy, Week 2

First attempt: Flawless. 

Baby latched on perfectly, suckled his way into a milk coma, and left me feeling the effects of the healthiest addiction known to man. I was hooked. The old familiar feeling of slow suckling was better than I had remembered, and from that day forward, baby and I have been joined at the boob. 

I would never shame a mother who chooses to formula feed. Trying to decide whether to breastfeed or formula feed can be very difficult. As mothers, we want to do the right thing and make the healthiest choices for our babies, but we all have different circumstances and what works for one of us may not work for the other. 

My personal opinion regarding breastfeeding is that if a mother is physically capable of nursing, she should! As I continue to learn more about dairy and soy products, I am confident that breastfeeding is the healthiest choice for babies; our bodies make milk for the sole purpose of giving them every nutrient they need. Breastfeeding is incredible! A mother's milk is specially formulated according to the sex of her baby, and when a baby is sick, the milk instantly includes antibodies to fight bacteria and illness. Unlike expensive formula, breast milk is free! And then of course there is the added benefit of bonding with your little one; nothing beats the skin to skin contact with a precious baby who stares into your eyes while your body provides everything it needs to live. 

This time I have decided to slow down and enjoy the experience of breastfeeding. I don't worry about me-time, because I'm so in love with we-time. My only suggestion is that mothers should try to introduce their babies to a bottle early-on, even if there's no apparent need. It can be torturous to try to get a 5 month old baby to drink expressed milk from a bottle for the very first time. 

While breastfeeding, there will likely be times when you question whether your baby is getting enough milk. As your body changes, your milk supply may drop, which is something that happened to me around month 2. After going through a growth spurt, baby stopped nursing as often, which caused my body to reduce the amount of milk it produced. No matter how much I nursed, my baby was fussy, and acting as though he wanted more. I had also been pumping milk and storing it just in case I returned to work; it was hard to get the timing right and it seemed that baby was always hungry. 

Right after coming home from the hospital, I'd sifted through a big box of goodies that were gifted to me as a going-away or welcome to mommy-hood gift. One of the things I'd received was a coupon for an organic  "Mother's Milk" tea.

I remembered that I had the coupon, and after digging around a bit, I realized that there was a sample teabag attached. I looked up the ingredients of the tea to find out exactly how it was supposed to increase my breast milk production, as it claimed. The tea had a lot of ingredients that I had never associated with breast milk before, and they were all organic:

*Bitter Fennel 
*Anise
*Coriander
*Fenugreek Seed
*Blessed Thistle 
*Spearmint
*West Indian Lemongras
*Lemon Verbena 
*Marshmallow Root

Reluctantly, I boiled some water and drank a cup. 

The tea tasted unfamiliar with the exception of a hint of mint from the spearmint leaf. It had a delicate flavor, none of the herbs were too overpowering, so I was able to enjoy it without any honey or sweeteners. 

After sipping for awhile, I wondered whether it was the tea or the gliding rocker that was making me feel so at ease. My body felt warm, light, and relaxed. The feeling of euphoria washed over me as I climbed into my bed and fell into a deep, peaceful sleep. 

The next morning, I definitely noticed that my breasts were more full than they had been the day before. However, it is not uncommon to have a bit of engorgement in the morning, since baby has eaten less throughout the night. As the day went on, I didn't have any problems with milk supply; each time he ate, my son seemed happy and satiated. 

Coincidence? 

At 4 months old, my son is experiencing his first cold. His little nose is stuffy and he is pretty miserable when he isn't asleep. I have been nursing him as often as possible to get some of those magical antibodies into him, but I hate to see him suffer. I started to brainstorm and research safe ways to help him feel better, faster. The general rule of thumb is to nurse as much as possible, so I decided to load my body up with healthy fruits and vegetables so that my milk would be super-charged with vitamins. 
While in the grocery store I noticed the "Mother's Milk" logo among other herbal teas in the tea and coffee aisle. I was surprised to see it since I thought that it would only be sold in specialty stores or online. I reasoned that I had never seen it before because I just hadn't been looking. The package of 16 tea bags was reasonably priced at under $6 and the packaging proudly confirmed that none of the products used were genetically modified. I purchased the box, and decided to have a cup upon returning to my home. 

After taking my nightly prenatal vitamin, I poured a cup of the "Mother's Milk," and began to sip. It had the same delicate flavor as the sample I'd tried, but since it was more fresh, the flavor was a bit stronger. 

I started writing this review when I took the first sip of tea. My muscles were tense from pushing around a grocery cart and hauling baby's car seat to and fro. My mind was fried from refereeing 3 rambunctious children while trying to care for my sick little one. My thoughts raced as I thought about the following day's schedule. 

I am currently calm, relaxed, pain-free, tension-free, and loving this tea! 

The calming affect is the most noticeable result of drinking "Mother's Milk." Upon further research, I've learned that the tea is considered a galactagogue, which is a substance that can increase milk supply. My breasts are beginning to feel more full, indicating that fenugreek, the main milk-boosting ingredient in the tea, is highly effective. 

I enjoy the taste of tea, even when it is slightly bitter, The spearmint disguises this bitter taste, but if you're particularly sensitive to it drinking it with apple juice might help. It can be ingested as a hot or cold tea, and since it is so relaxing, I suggest drinking it at night. 
"Mother's Milk" boosts milk production, but does not maintain it. You can drink a little every day as needed, but you won't know the dosage of the herbs within the tea. If you need something more controlled, you can always take fenugreek in capsules or powder form. 

I am so glad that I discovered how wonderful this tea is. I would recommend it to any nursing mother, whether you need to boost your milk supply or you just want to unwind with a hot cup of organic, healthy goodness at the end of the evening. I hope to continue breastfeeding well past the first year, and I encourage you to stick with it for as long as you can! 

My verdict: PUMP this product! (Pun intended)

Emerald City Smoothie



Green smoothies are officially "IN." 


Blending nutritious fruits and veggies into a delicious, energizing drink is the perfect way to fill your body with natural goodness. Whether you are starting your day with a smoothie, substituting lunch for liquids, or satisfying your hunger with a quick smoothie snack, you are sure sure to love this new health trend. 

The great thing about a green smoothie is that it's really hard to mess up it up. It may take a little trial and error while you experiment with different flavors, but ultimately you can't go wrong! 

I am a lifelong veggie lover! I've learned  to cringe in silence when I hear someone profess their hatred, which is surprisingly often. For people who don't care for greens, smoothies are a great way to disguise the otherwise strong, bitter taste of kale, collards, spinach, etc. 

Fruit contains natural sugar, which eliminates the need for added sugar and sweeteners. Sweet apples, berries, bananas, and mangoes are just a few fruits that will delight your taste buds and make green smoothies one of your new favorite things. 

One of the best ways to make health a habit, is to let your creative juices flow (pun intended). You can use fresh fruits and vegetables, or choose from the frozen selection at your local grocery store if your favorites are not in season. During the summer months, I love to buy fresh, juicy berries, but they tend to grow mold within days of purchase. To ensure that I can enjoy them year round, I wash and freeze them as soon as I get home! 

Another great smoothie trick is to pre-portion  your ingredients before freezing. When it's time for a smoothie, you can easily grab a bag out of the freezer, throw it in the blender with your juice of choice, and voila! Instant smoothie!

My kids guzzled down every last drop! It's wonderful to know that their source of excitement was also the healthiest thing they'd had all day. 


Tip: Save the papaya seeds from this recipe. Store them in an airtight container and freeze them for use at a later time!

Emerald City Smoothie
Prep Time: 10 Minutes     |   Total Time: 10 Minutes
Serves 4

Ingredients: 
  • 16 oz Naked Green Machine (more as desired)
  • 11 oz Unsweetened Vanilla Almond Milk 
  • 1/2 cup Baby Spinach
  • 1 cup Fresh or Frozen Mango
  • 1 cup Fresh or Frozen Pineapple 
  • 1 cup Chopped Apple (I used Granny Smith)
  • 1 cup Fresh or Frozen Strawberries
  • 1 cup Fresh or Frozen Papaya
  • 3 tbsp Hemp Protein
  • 2 tsp Chia Seeds
  • 1 small Aloe Vera Leaf
Directions: 

1. Prepare the aloe vera leaf (see video here).

2. Add ingredients to blender. Blend on high until smooth. 

3. Pour and drink chilled.


Aloe Vera the Super Plant


Aloe vera is a medical miracle, full of nutritional benefits. 

Known as a healing plant, aloe vera is one of over 400 species of aloe. Native to northern Africa, aloe vera's first documented use can be found in Egyptian records dating back to 1550BC. It was used for many years as an internal and topical cure for a number of ailments among the Egyptians. Later records show that the Greeks used the plant to heal wounds and treat hair loss. Now, this succulent plant is used cultivated and used throughout the world. 

Aloe vera plants grow wild throughout the southwest United States, Mexico, Central America, the West Indies, and Southeast Asia. However, it is easy to grow and maintain the plants just about anywhere. 

Succulent plants absorb water quickly, and store it for an extended period of time. Like other succulents, aloe vera is uniquely self-healing; if it's gel-bearing leaves are damaged, it quickly repairs itself and continues to grow. The plant prefers sandy soil and warm climates, but can survive in cold temperatures as long as there is no frost. 

Though aloe vera does not grow naturally where I live, I was able to find a good selection at Home Depot, and purchased a relatively mature plant for only $9.99. My plant grows happily near a windowsill, where it enjoys afternoon light and is watered when the soil is dry. Aloe vera plants wilt if their pots do not drain, and their leaves can be scorched by strong, continuous sunlight. My children chose to name our aloe vera "Cuddles," despite its prickly sides. 
What's Inside?

Additionally, ingestion of aloe vera is not recommended among women who are pregnant or breastfeeding. 


Finally, spot test aloe vera topically to determine whether an allergy exists. If you experience an abnormal reaction such as rash or burning, do not use or ingest it. 



How to Use It
There are aloe vera supplements, but nothing beats having a plant in your kitchen, or near a window in your home. Fresh plants range in price, starting at $3.99 for a small, immature plant. You can also purchase aloe vera seeds and grow your own. 

Some companies sell aloe vera juice, which is made by grinding up the entire leaf. However, if the aloe latex is not removed prior to the juicing process, these juices can be harmful to your help. In addition, purchasing aloe juice means that you are running the risk of ingesting many unneeded and unhealthy additives. 


Like all things, moderation is key. Aloe vera isn't something that you should ingest on a daily basis for an extended period of time. As with all natural remedies, you should listen to your body, determine whether it needs healing respond accordingly. If you begin to experience strange reactions after extended use, take a break and use only when needed.

Ruby's Sinus Remedies

For the last 10 years of my life, I've been the unfortunate victim of allergy season. Twice a year, every year. Usually, my allergies flare up right around the time that winter turns into spring, then again when summer turns into fall. 

I was born and raised in Denver, Colorado, where the high altitude produces very dry air. While living there, the worst I experienced was week of having a stuffy nose and dry, red eyes; nothing that around-the-clock Claritin couldn't help. 

However, within weeks of moving to Illinois for college, I found myself in the Emergency Room being treated for a throat infection. The doctors didn't know what was going on. They gave me Vicodin, which was totally ineffective and contributed to a killer migraine, and sent me on my way. 

It wasn't until moving to the Gulf Coast and suffering full-blown infections, getting misdiagnosed as having Strep Throat, and writhing in agony year after year, that I learned what was really going on. 


When I was 5 years old, I had my adenoids removed. The adenoids are a patch of tissue that are located in the back of the nasal cavity. They are there to trap germs and fight off infections. Adenoid removal is common practice for children who experience recurring ear infections; the tissue swells while the adenoids fight infection, which produces heavy snoring and choking during sleep. My daughter had her adenoids removed at the same age, for the same reasons. 

Removal solved the snoring problem, and got rid of the frequent ear infections, but it left my nasal cavity wide open to all of the icky germs with no defense mechanism! Duh. 

I figured out that during allergy season, I was developing sinus infections left and right because my body's natural defenses were incapacitated. The sinus infections produced painful pressure around my eyes and nose, leading to severe headaches; swollen glands under my jaw and behind my ears; and the worst throat pain known to man. 

I took Benadryl, a well-known antihistamine, for awhile, in an attempt to block the intolerable histamine and reduce the amount of mucus produced by the allergens. It was slightly effective, but the drowsiness associated with its use made it impossible to work or function normally.  Even taking it at night began to bother me once I looked into the side effects. I determined that I didn't want to keep ingesting medicines to combat the sinus infections. There had to be a better way! When I developed a sinus infection during the second trimester of pregnancy, I was motivated to find a solution by any means necessary. Ingestion of popular over-the-counter medications can be harmful during pregnancy, leaving many expectant mothers to suffer through cold and flu season in agony.

After a lot of painful trial and error, I am proud (and relieved) to present: 

"Ruby's Sinus Remedies" 


  • At the first sign of allergy symptoms, gargle with a hot water/sea salt blend. Continue to gargle throughout the duration of your symptoms. Morning, noon, night, and anytime in between. Do not swallow the salt water intentionally, small amounts of incidental ingestion are nothing to freak out about.
    • Directions: Make 6 to 8 ounces of water as hot as you can tolerate without scorching the inside of your mouth (obviously do not use boiling water), and add about a tablespoon of sea salt. Stir briefly and then gargle; try to reach the back of your throat without gagging...which is easier said than done. 
    • Why it Works: The salt acts as a magnet for water, so you're pulling the fluid out of the tissues in the throat area, effectively washing the virus out. If you do this before it spreads, your chances of beating the infection are much better than starting a few days after feeling sick. You're also creating a high-salt barrier, which can prevent the invasion of germs. 
  • Boost your Zinc, Vitamin E & Vitamin C. 
    • Directions
      • Eat Your Way Healthy: 
        • Citrus - Grapefruit, Oranges, Lemon, Lime, Tangerines, Clementines. 
        • Red Bell Peppers. 
        • Broccoli. 
        • Garlic - Eating raw garlic is great, but it can be hard on your stomach. Crush garlic before adding it to other foods, or swallow half a clove raw occasionally, not daily. 
        • Red Cabbage. 
        • Beets. 
        • Sweet Potatoes. 
        • Kale
        • Ginger - Eating ginger raw is fine, but you can also cut it into pieces and let it steep in boiled water for about an hour. Reheat the water to boiling and drink as tea. 
        • Spinach. 
        • Yogurt - Plain, unsweetened or vanilla; try to avoid sugar. Yogurt with live cultures can boost immunity by keeping your intestinal tract free of disease-causing germs. Yogurt also increases Vitamin D, which aids in the absorption of Vitamin C
        • Almonds. 
        • Tumeric. 
        • Green Tea - Cold brewed green tea is the healthiest option, but all green tea is a wonderful source of antioxidants.  
        • Papaya - Grind or roast the seeds and eat those too! 
        • Kiwi. 
        • Sunflower Seeds - Not the heavily salted or flavored ones. 
      • Supplements: 
        • Zinc - Recommended daily intake is 11mg for adult males, 8mg for adult females. 
        • Vitamin E - Recommended daily intake is 1,000mg for adults. 
        • Vitamin C - Recommended daily intake is 90mg for adult males, 75 for adult females. 
        • Multivitamin - An easy way to get all of the vitamins you need throughout the day is to supplement healthy eating with a good multivitamin. However, you'll need to make sure that use of additional supplements don't result to overdoses; pay attention to the recommended daily intake. 
  • Unleash The Power of Lemon. 
    • Directions: Prepare Celestial Seasonings Lemon Zinger tea as directed. Squeeze 1 lemon into the tea, and add honey (raw honey is best, but regular honey is just fine) and grated ginger. Sip throughout the day. I recommend that you invest in the only travel mug I will ever use again, the Contigo SnapSeal Travel Mug, which will keep this tea HOT for a full 6 hours!
    • Why it Works: The lemon will help to rid your body of excess mucus. This is especially important when you are fighting a sinus infection. If you don't eliminate the mucus, it can cause an upper respiratory infection, and you don't want that. The tea itself is all natural, made with Hibiscus, Rosehips, Roasted Chicory, Orange Peel, Lemongrass, Lemon Peel, and Whole Dried Lemons. The fresh squeezed lemon will metabolize when ingested, providing an electric alkalinity. The honey will soothe your sore throat. The ginger supports immunity, eliminating toxins from your body.  
  • Expectorate! Expectorate! Expectorate!
    • Get that gunk out of your system. I literally carry around a box of tissues (who am I kidding? I use toilet paper...more for your money), and a trash bag around with me so that I can expectorate as needed. Clear your nose and throat. Swallowing the mucus you cough up will keep you sick for sure. Getting rid of it will help your body heal much faster. Also...wash your hands often, but especially after you expectorate. 
  • Sleep Smart. Using Vicks VapoRub on the bottom of your feet at night will clear up your cough and help you get a good night's sleep. A bit of elevation helps too!
    • Directions: Before you go to bed at night, slather Vicks VapoRub on the soles of your feet, then put on socks. Elevate the head of your bed approximately 6 inches; using an additional pillow doesn't always help, since your nasal passages can become blocked by the angle created by a soft pillow, or if you slide down. 
    • Why It Works: I don't know. It just does! This old wives tale will interrupt even the roughest cough and help you sleep soundly. While there are no solid medical reasons why this works, it is more effective than any over-the-counter cough syrup. While you sleep, you are aiding in the drainage of those germy, irritating fluids from your sinus cavity. 


This list is not comprehensive, but these tips have helped me beat sinus infections within 1 to 2 days of feeling that annoying warning itch in the back of my throat. I have managed to avoid antibiotic prescriptions for over a year!
